
Pork- CV sweet pork is 10x better than the Pork rocky balboa that CR has or whatever its called.
Tortillas-CR. I know my carbs like I know my buffets and their tortillas top CV for sure...
Ranch-Some say CV's ranch is too runny but I like it like that. It tastes better than CR.
Service- CV
Chips-CR
Rice and beans- CR
Lettuce- CV. I hate that CR has huge chunks of lettuce. As if I dont look like a cow eating that salad already, please dont make me take gigormous bites of lettuce!
My complaint with both is that they claim that their salads are "healthy" BULL. I swear everytime I get on the scale after eating there the night before that I have gained 3 pounds. I swear.
Bottom line- CV is cheaper, and they have BETTER PORK, which is why we all go anyway! If you dont like the pork than sorry that this post has nothing to do with you whatsoever:-)
And if you haven't tried either of these places apologize to yourself and get your booty there pronto. Probably you will see us there;-)
Heres a couple super easy recipes I found online.Your welcome in advance!
Now the pork is just 3 ingredients. Yeah, believe it!
1. Boneless Pork Roast ( 2 or 3lb roast)
2. 1 and 1/2 Cups Brown Sugar
3. 2 cups salsa (mild, medium or hot)
DIRECTIONS:
Just combine the brown sugar and salsa in a crock pot, and then add the pork roast, and spoon some of the sauce over the roast. Cook on low for 4-6 hours or until tender, (spooning the sauce over the roast several times) then take the roast out, shred it with two forks, and then put it back in the sauce to simmer at least another 1 hour or longer to really soak up the juices. Then you're done! If it seems like it's getting dry while it's simmering, add more salsa and brown sugar! It needs to be juicy!
Cilantro Lime Dressing
*1 Buttermilk Ranch dressing packet
*1/2 c buttermilk (or substitute one of these two alternatives:
a - Pour 1 TBSP Vinegar and the rest of the 1/2 cup with milk
or
b - 1/2 cup mayo or miracle whip
*1/2 c sour cream
*1 clove garlic (if I don't have real garlic, I've used garlic powder)
*juice of 1 lime (important)
*cilantro (very important!)
*Green salsa 1/2 cup (or a little more if you want a little more kick)
Just combine all the ingredients in a blender and pretty much puree it until it's a thick salad dressing consistency.

I'm pretty sure I've seen you and Cooper at Costa Vida before. And I agree with the person above me. I've been to the CV in Provo and it is NOT the same. Still good, but nothing like it is in AZ.
I am totally impressed. Although, one complaint. The tortillas at Cafe Rio are NASTY. Hard, thick, cold, flaky and.... they put gross cheese on the bottom that does nothing for the salad. Also they put like a cilantro bush on top of the salad. I hate that. I love Costa Vida 100% more. Just my 2 cents. :)
Well you have convinced me to give Costa Vida a second shot. I love the dressing at Cafe Rio, but I am willing to give it a go if I HAVE to. ;) In other news, yay for dental materials...not. That class was kinda fun though, just because you got to mix stuff, and have no idea what you were doing. Or maybe that's just me.

oh dear! i'm gonna go get me a sweet pork salad from costa vida right about.... now! thanks a lot shay- my goal of not being a heffer this week is completely out the window! dont worry i'm sure i won't regret it after i devour the whole thing in its entirety! mmmmm. i'm excited!
